Vegan Cilantro Pesto
Ingredients: 2 bunches cilantro 1 small bunch parsley 3 Serrano Peppers or 1 Tbsp Red Chili Flakes 1/2c roasted pistachios 1/2c olive oil 6 garlic cloves 4 Tbsp Lemon Juice Salt to taste
Preparation: Rinse and dry cilantro and parsley. Add oil and garlic to pan over very low heat, stirring constantly. Caramelize the garlic and add to vitamix. Add all ingredients to vitamin and blend until consistency of paste. Continue to add olive oil until you reach your desired consistency. Note: if you don't want it too spicy, cut out seeds from Serranos.
