Sweet Potato Madness

4-6 Large Sweet Potatoes
2 tbs ginger
6 garlic cloves
1/2 onion
6 tbs ghee

Preheat oven to 425*. Peel yams and wrap each individually in foil. Set the yams on a baking sheet and place in the oven for approximately 45mins or until soft.

Melt ghee in medium sized sauce pan on low-medium heat. Add onion, garlic and ginger, stirring frequently until caramelized. Don't rush this process by turning up the heat, onion can burn easily and garlic chips won't create the taste you're looking for.

Once caramelized and yams are done. Add all ingredients to Vitamix or food processor. Note of caution, you're working with hot potatoes, be mindful to secure the lid. Blend until the consistency of the puree is very smooth...SERVE!

Food Pairings: this sweet potato puree will go with just about anything. We use it as a bed for meat or vegetables. We've had it with everything from lamb, steak, scallops and vegetable skewers. It literally goes with just about everything.

Wine Pairings: fail proof pairing! Think sweet, so any dry wine will go well with this puree--red or white!
