Ingredients: 2tbsp Avocado Oil (olive oil can also be used) 1/4c popcorn kernels *2tbsp Ghee Nutritional Yeast to taste Salt to taste
Preparation: Use a pot that is tall/deep that has a small circumference at the base. Good examples of a steel pot here (bottom right, rather than the one on the left). Add the oil to the pot over high heat. Once the oil has warmed, it should cover the entire base of the pot. Add the uncooked kernels to the pot and sprinkle with a small amount of salt. Add lid and gently swirl the pot to help cover the kernels with oil.
It can take up to a minute or two for the kernels to start to pop. Listen for the popcorn, it will pop rapidly and as soon as the popping slows to a few seconds between each, turn the heat off. Now that the popping has slowed and the pot is full of popped corn, it's safe to take the lid off. You must pull the lid off immediately to release the heat to keep the popcorn from burning. Immediately pour popcorn into a bowl.
Melt the ghee and pour over the popcorn. Stir or toss the popcorn to more evenly distribute the melted ghee. Sprinkle the salt and nutritional yeast to taste. Nutritional Yeast is flakey so it can help to pinch the yeast to better grind it up as you sprinkle it on. Nutritional Yeast is just that: NUTRITIONAL!
