Date Bars: Better Than You Think!

Ingredients: 1lb Organic Dates 1C Shredded Coconut (make sure there's no other ingredient, coconut only)

Preparation: Pit the dates by cutting the fruit in half and pulling the seed out. Add half of the dates to the food processor with half the shredded coconut. Blend until the date fruit is smooth, it doesn't take long. Then, add the other half of the dates and coconut and blend the second half. Combine everything in a bowl. Use your hands to need the two batches of date mash together. Then, use your hands to roll the date/coconut mash into either finger sized rolls or balls. After forming the mash into a shape, dab the bar in the shredded coconut and set on a baking sheet. Place the baking sheet with the date bars in the freezer for firming. After about 20mins in the freezer, bag in a freezer-safe bag and keep in the freezer for keeping.
