Banana Pecan Date Bread: Who needs the bad carbs and sugar?

Ingredients:
Dry Ingredients, Combine in large bowl: ½c coconut flour 1/4c shredded coconut 3/4c almond flour 1tsp Cinnamon 1/2tsp Nutmeg ¾ teaspoon baking soda pinch of salt
Wet Ingredients, Combine in Food Processor: 2 very rip bananas 8oz Pitted Dates (half a pound) ½ cup ghee 4 eggs ½ teaspoon vanilla extract
Preparation: Preheat oven to 350*. Combine all wet ingredients in food processor and blend until smooth. Combine all dry ingredients in large bowl. Sift dry ingredients with a fork to ensure there are no clumps. Combine wet and dry, stir until combined.
Grease a bread loaf pan with coconut oil. Trader Joe's carries an awesome spray coconut oil that I really like. Pour batter into pan and smooth over the top so it bakes with a nice aesthetic. Throw into the oven and leave it! Check back in 30mins with a toothpick, check a few locations, if the toothpick is still wet cook for another 15 or so minutes.
